Why industry uses baking soda and maida?

Baking soda/powder releases carbon dioxide gas, which makes the cookies soft and porous. This leaves behind (in the cookies), traces of sodium which corrodes your intestines. Maida expands well (to make cookies porous), but sticks to your intestines. That is why it is said that if you please your tongue, your body gets punished.

Why are our cookies are not as soft as the Industry ones?

As we do not use even 1% maida and no baking soda, the raising effect is limited in our cookies. The cookies are not as soft as industry ones, but delicious and more importantly, healthy. What is the point in making soft cookies by unnatural means and hurting your health. Most so called whole wheat cookies contain refined flour added (and its well published in the ingredients). We cannot dilute our standards to match their softness, but we can still assure you delicacy and quality.

Why do we use butter instead of Vanaspati ghee?

Vanaspati ghee/margarine/dalda (banned in many countries) contains the unnatural TRANS fats that are formed by the process of hydrogenation. These hydrogenated fats produce LDL (bad) cholesterol in our body. Nature does not make such hydrogenated fats. Butter raises good cholesterol in the body and also provides many nutrients (Vanaspati ghee sucks out vital nutrients from body due to its toxicity).
